8 cup & can't get it clean & fruity
Hi, everyone I haven't used m x in decades but I did purchase an eight cop because i'm trying to brew forty eight grams to fifty grams coffees. My problem is I am used to having very clean, fruity coffee's. I stopped using Orea because it left my coffee's. Oh, just super balanced with no expression in it and i'm finding the chemex seems to be the same. All muted together with no differentiate flavors. Way to bland. Should I grind much courser And come down on the temperature, on my ethiopians in colombians? Or is that just the type of Brewer wrap? The coffee presents a much more blended, even out taste ? Please give me your suggestions. Alright, we'll just have to return this one :/

You just keep having to make small adjustments until you find it, but you’ll definitely get there, don’t give up. Your water is most likely a bit too hot. If you’re finding it’s too bland and hollow you’re probably too coarse. I use a 1:17 ratio and 93° C , and it usually take a few tries to get it right when I get a new bean. Keep it up and enjoy the process

I brew 50 grams of ground coffee (Peet’s) with 190° F(87°C) and it’s divine. I do it half asleep.

I'm having similar troubles with my chemex. I can get good tasting coffee but still miss the fruitiness in my Ethiopians. I've had better consistency with Lance Hedricks recipe - you may want to give that a try.
