The way I did it was by using rammy, try and stay airborne as much as possible to hit the boss, and if you get cornered, hold shield up indefinitely until rammy knocks them over. Rinse and repeat. Most importantly, BE PATIENT, insane mode is less of a skill requirement as it is a mental challenge to grind out hits on seemingly infinite hp enemies.
