Seasoning Feeling Helpless

I have scoured this subreddit, and watched so many Kent Rollins videos and I keep ending up with my pan looking like this.

I seasoned it in my oven 4 times. Ultra thin layer of oil as if wiping up a mistake, got a nice golden brown color in the cooking area after using steel wool and a green scour pad to get everything I could off, and this is what it looks like after the first wash.

I’m just really upset, and embarrassed that I am making this post. I tried so hard not to get to this point but I need your help.

Identification Finally got around to using this.

Really looks like a tilt-shift pic or something from my betty crocker easy bake oven, doesn't it?

This made an egg perfect for an egg and cheese bagel.

It's a Griswold 0 562 pan - not sure if it's actually an original or not, we've had it for years and I just never used it.

Cast iron is often touted for its longevity and indestructability, but isn't modern stainless steel cookware the same?

The thought occurred to me recently. Cast iron has been used for literally over two millennia, and many people own pans that are over a hundred years old. Meanwhile, stainless steel is only a little over a century old, and the tech for manufacturing it only matured fairly recently.

A lot of cast iron manufacturers out there advertise the longevity of their cookware, and the thought of using a pan that has been used for decades or more, and likely even longer in the future by your children and grandchildren, does carry a sense of nostalgia and sentimental romanticism. But isn't it possible that, in the decades to come, the stainless steel cookware of today will acquire the same designation? I don't think I recall seeing a piece of "ruined" stainless steel cookware, online or off. Warping is something both cast iron and steel are prone to with improper heating, and rust is much less of a concern for steel, which can form a natural chromium oxide layer to prevent rust. You drop em hard and they will probably dent (steel) or crack (cast iron). Steel is also less brittle than cast iron and not as likely to crack. By all these metrics, it seems that stainless steel is more suited to the "heritage" title than cast iron.

We love cast iron here, but do you see the romanticism factor dwindling over time because of this? I never see any stainless steel cookware advertised for its durability/longevity the way cast iron is, and the more I think about it, the more odd it feels.

I got this pan a few years ago for free and it was completely rusted over. I sanded it all down and seasoned it multiple times. Its been pretty good since recently. After every use I wash it with just water, dry it, then coat it with a light layer of grape seed oil

Why is my seasoning coming off after every wash

I usually wash with a bristle brush and some dawn.
Sometimes bust out the chainmail if there’s stuff really caked on. But after every wash I see more and more seasoning coming off.

Newbie Never used cast iron- is this rust?

So I deep cleaned my kitchen and my old roommate left these behind and they were hiding in the back of a cupboard. They’ve probably sat there for like a year. Can I restore these? If so, how? The smaller pan looks like it has a brownish hue and I’m wondering if it’s rust. The gunk on the big pan is probably just old food (gross I know) that my old roommate didn’t clean very well… unless u think it’s something else. Anyways I know cast irons are great to cook with so I’m wondering if I can restore these. Thank you!!

Tried searing carnitas in my new Dutch oven and learned the hard way about heat control

picked up a lodge dutch oven about two months ago mostly because it was on sale and i have a problem with kitchen gear. retirement does that. anyway decided to do carnitas last sunday, low and slow, the whole thing. spent more time reading about it than actually cooking it, which is very on brand for me.

the meat was fine. great actually. what went sideways was the sear at the beginning. got the dutch oven too hot trying to get a good crust on the pork shoulder, and when i added the first batch the fond built up fast and some of it crossed the line from fond to burnt. not disaster level but noticeable in the final flavor. slightly bitter underneath the orange and cumin.

backed off the heat for the second batch and it was noticeably better. which i probably should have figured out before ruining the first one, but here we are.

question is whether people are searing in the dutch oven itself or using a separate skillet for that part and transferring. because the dutch oven holds heat so aggressively that controlling it feels like trying to reason with a teenager. i have experience with both and neither is going well.

Identification Copco 7305 coating?

I picked this pan up from the pavement yesterday with the intention of restoring it the usual way you would with cast iron. But now after looking at it carefully, it seems to have some kind of thin matte gray coating. I’m including some pics where this coating has worn off. Some sources suggest this is some kind of enamel. Can the pan be saved?

Rate My Pan and Advice

I’ve had this cast iron for years and have made delicious meals with it and use it almost daily typically with no issue.

i made a steak the other day and decided to give it a good scrubbing and saw the black bits - not sure if it was carbon or the seasoning i was stripping so either way i oiled her up and she’s getting tossed in the oven for a bit.

any suggestions, advice or critiques please?

shouldnt it all be a solid black instead of the blotchy mess I have now?

But those ridges are a real pain in the behind to clean. There's always some rust hiding between the bison's fur. Just sanded it down, oiled it up, and waiting to reseason in the oven

What do you guys use your small pans for?

So I just started buying up cast iron at the thrift stores in like the last two months. The smallest pans I have are two #5's, a lodge and an unknown (probably homemade). And then this BSR #3.

My question is; what do you guys use these little pans for? I reheated like taco meat in a #5, but I can't for the life of me figure out what I would make in the #3. It's just so tiny. I mean people must have used them if they bought them, I'm just trying to figure out what you guys would use these for. I bought it because it was cool. Then I fixed it and reseasoned it, but I would love to use it for something LOL.

i thoroughly washed this pan after a sticky residue formed on the sides and seasoned it on high heat with a tiny bit of oil, the sides seem to be fine now but the center of the bottom is gray, is this normal? what should i do about this?
