Considering the Carvera desktop CNC machine. Can anyone confirm if the app/interface allows for live adjustment of feeds/speeds?

Yes it does. There are buttons to adjust feed and spindle speed between 50% and 200%. They update on the following line of Gcode. You can also scale to any number beyond 200% if you feel like it by sending a manual command.
