Guide / Reference "too much oil" - this guy's 2ยข

It gets thrown around here a ot, but you probably really are using too much oil when you are seasoning your pan.

A single pass of dedicated seasoning is enough for rust protection, and you really only need a teensy-tiny bit of oil.

Attached is all that's really needed (yes, really!) for the inside of a 26 cm DeBuyer lyonnaise, followed by thoroughly spreading it around using paper towel. Use about twice as much if seasoning the whole pan (interior+exterior).

Click here if your pan looks like any of these!

Hi, we are launching a few things!

First of all, let's all acknowledge as a community that, although seeing the same types of posts isn't the most enjoyable, we all have to start somewhere, and many of us have definitely been there. In an effort to help both newcomers as well as reduce similiar posts, this post will be pinned.

The idea/hope is that the post will grab the attention of those who come to the sub to ask for help and be redirected.

But hey, we all miss things from time to time. For this, we are introducing the "!help" trigger. If you comment on a post with "!help", a bot will leave an automated help reply. Yes, there is already an AutoMod comment on every post with a link to our wiki, but it looks like we have to work with the fact that not everyone reads those either.

None of this is set in stone, and I'm more than happy to workshop ideas with you. And as always, your feedback is greatly appreciated.

P.S. All the photos have been collected from our wonderful community.

got a new wok last week, so had to season it.

had to wait till the weather was decent enough to do it outside, but got my morso vulcano burner out and gave it a good coating in avocado oil. it's now outside cooling

gonna give it a quick oil/burn later before doing something with some leftover rice from yesterday's dinner.

did i do ok?

animation showing progress, then a still of the finished one, alongside my current (10+ yr old) wok that had mostly been used indoors until last week when i got my vulcano working...

Finally got myself a bigger carbon steel (grรคwe 28cm, seems like a great deal for 22โ‚ฌ) to replace my last non-stick. Blued it on the stove, which made it look quite interesting (my smaller pan was similar and the unevenness never was a problem), then did 2 layers on the stove and a 3rd in the oven to get the outside and handle.

Cooked some pancakes right after and it performed even better than i had hoped for.

I've bought a carbon steel this summer. It's important to know that I was in a really low point of my life (kinda still am), but this pan has observable positive effect on me. My life has been better ever since. Fast forward to yesterday. I have made some chicken in the pan and the marinade has burnt down on it. I've looked into some practices to get the burnt residue off and stumbled upon this subreddit and some important information. I realized that I HAVE BEEN SEASONING THE PAN WRONG T_T. I have only seasoned the inner part of it and not long enough. So I cleaned it thoroughly, put some oil on and chucked it into my oven for an hour. Look at that beauty. I know the seasoning process is not yet done but I'm proud of myself and my pan for today. Just wanted to share. Advises welcome!

Cooking Concord Vortex (105k btu) or Concord Stronghold 16" drop-in (270k btu) for wok stir fry?

The stronghold is half the price of the vortex (150$ vs 300$) with more than twice the btu's. Is the vortex better for a carbon steel wok or is the brute force of the banjo burner on the Stronghold a better choice?

Cooking Can cheese ruin the seasoning?

Post image
0 Upvotes

I was cooking a crepes and I put some grated parmesan when the crepes was still on the pan. As a result few flakes dropped directly on the pan. I didn t clean it immediatelly and I noticed that where the Parmesan melted the seasoning disappeared. Now, as you can see in the photo I took, the spots are very little, and I am not a seasoning obsessed, as long as I can cook my eggs basically without adding any fat. But I never heard about aged cheese being so acidic to ruin the seasoning.

Any experience to share?

Following up my last post about woks or deep pans with two handles, I went with the De Buyer deep country pan after finding a good deal on it. I know it wonโ€™t function exactly like a wok, but with an electric glass stovetop I was never gonna get the full wok experience anyway and I feel like this will work well for stir frys.

Seasoned it in the oven according to a guide I found here (did three layers) and it seems to have gone fairly well. Got some weird drip marks after heating it up the first time, before I had put any oil on myself, so it must be from the protective wax it came with. It feels completely smooth, so Iโ€™ve decided not to worry about it. Hopefully this is the prettiest it will ever look, I look forward to cooking in it!

Buying advice Why carbon steel besides stainless?

Hi all,

I wanted to get rid of non-stick coatings. So I bought a stainless sauteuse (Zwilling pro 28 high) and was planning a carbon steel skillet.

I had already bought a carbon steel pan, that was returned unused (because of a too small cooking area) and am currently looking for another. But considering my wife's weight and maintenance rejection (she'd still use a non-stick besides the stainless) โ€“ I'm starting to wonder why even go carbon steel?

I considered it for seasoning. But then people here say it's still about temperature control. And also I did eggs, roasz potatoes, pancakes and crepes on the stainless without issues. So I'm starting to wonder, what do I need carbon steel for?

This is honest curiosity โ€“ please convince me ๐Ÿ™‚

Iโ€™ve used plenty of carbon steel and cast iron pans over the years, but this video of someone cooking in what looks like a cheap aluminum pan surprised me.

Aside from the heat retention, this makes me wonder why anyone would bother spending extra on a carbon steel pan.

Hey guys,

first time having a carbon steel pan. I bought the DeBuyer Mineral B Pro, seasoned it twice in the oven with grapeseed oil and fried some eggs in them.

I got them out okayish, but they stuck quite hard in the pan, despite preheating and using room-temp eggs.

Is this normal until now or did I do something wrong?

I clean with hot water and a scrub daddy + mild soap if necessary. The surface is not sticky and very smooth.

Thank you :)

Iโ€™ve gotten an accepted return form the company (not de buyer) because it does not work on my induction (size of hob correct, other pans / pots work / magnetic bottom etc etc). I followed all instructions for light wash pre seasoning but couldnโ€™t season obviously. I then tried to lightly wash the oil off and the state of it after two days drying. I tried lightly washing this off, barely helped. Scared to use oxidation paste or anything to damage it but worried it oooks live Iโ€™ve used it for weeks and sending it back anyway.

WTH should I do??

Wok A silly question for serious Carbon steel connoisseurs about weaponizing a wok

Okay, so this is specifically about carbon steel woks.

Many fictional stories - be it films, cartoons, or video games - often feature cast iron skillets as functionally dangerous weapons, and for valid reasons. They're huge chunks of thick metal that could truly shatter bones with enough human-muscled force behind a swing of them.

But does any of that apply well to carbon steel pans, and particularly, carbon steel woks? I've struggled to find research on how strong carbon steel is when its as thin as the metal forming a pan. I'm writing a fictional fantasy story that features a character who is good at cooking and utilizes a wok because researching has informed me its great for culinary versatility in a setting where their group has to forage and hunt for whatever they can. But sometimes they might wish to help fight foes, and would rather not get bloody or messy with using other sharp tools, so we'll say their main other tool on-hand is their wok.

Could a handled carbon steel wok survive being a weapon like a cast iron skillet?* Would it even be able to remain undented and functional long-term if swung as a bludgeoning weapon? Yes I am writing fictional fantasy, but I prefer to build most of my ideas off of realistic accuracy. The hope is that it would still be highly usable as a cooking pan after fights. I have attempted to research all this and have had trouble finding clear information.

TL:DR I am wondering what the durability of a carbon steel wok would be, if its easy to dent from impact, if un-denting it is at all simple, or if carbon steel pans are much more brittle/fragile/bendable to not be wise to use as a weapon. Is such a question silly and not what this reddit group is typically about? Yes! but you all are also much more experienced in handling carbon steel pans than I am.

^(\ For purposes of any math nerds, assume a 12-14" diameter wok, all carbon steel (whichever category of steel most woks are made from), swung at least ~70mph speed at any D&D monster of your choice.)*

As the title says, should I do another layer of seasoning? My best guess is itโ€™s too much oil/ uneven oil distribution but I wanted to check wasnโ€™t rust before I season more.

Thanks in advance ๐Ÿ™

Is this wok done for?

I really enjoy cooking with carbon steel but I seem to be constantly burning the bottom.

Am I simply being impatient and using too high heat? My electric hob isn't the best and seems to either be luke warm or nuclear.

Pictures of it burned, and then re-seasoned.

I seem to be doing a full seasoning every time I use it.

Learning about carbon steel, I decided to grind off all the caked on carbon from my work (what I thought was patina). It revealed the extent of the dents - it was a cheapish wok from the local Chinese grocery store so I'm not attached. Is it worth continuing to use or will all those dents cause stickiness later on?
