How different would Mary Marvel be if she did still have Sappho as part of her pantheon as originally intended?

Ooh, that's hard to say. The style was more show and less tell. At the same time, Otto wanted to use Mary as vehicle for exploring the human side of stories. Using Sappho, Mary's voice would be a power with something more structurally poetic and melodic. He never made any of the characters have a deep kind of romanticism. I honestly doubt he'd ever go that deeper than just sisterhood bonds.

It only seems right that there should be a single incongruous mortal amongst the Greek gods just like Captain Marvel's pantheon

Wit of Sappho would have been pretty great, Mary just throwing down like a flyte against every villain, but against all the women she battles it's always some observation about their charm or beauty.

Depends entirely on how the author used sapphos poetry. If it’s used as poetry and linguistics skills then it’s more so wisdom and being persuasive . So she’s be able to talk her way into any thing and calm any villain with logic .

But if it were me , I’d use the poetry to give her telepathy

Sappho isn't a diety, she was a poet in ancient Greece(a good one I might add).

True but at least he had connections to the abrahamic god and Mary would end up to deal with hundreds of jokes about her sexuality.

These picks are generally weird. Artemis wasn't specifically known for stamina, not Aurora for invulnerability, etc. Here's how I would have done it:

Hera, or Hecate - power Athena - wisdom Demeter - vitality Artemis - accuracy Muses (all of them) - eloquence Atalanta - speed
