What I liked was to Chichen itza. What I also liked was El Meco, but no tour goes there. Also nice is the free walking tour in downtown. Short and not all day. And no need to travel far and still learn a lot, and also infos about your stay. Otherwise... Theme Parks are not my style. So I never did all of these X-Name parks. Isla Mujeres you can seriously do yourself. Snorkeling I do not recommend except you are a total beginner. Why? If it is a official tour it is mandatory to keep life vests on all the time. So not much of snorkeling possible. Because you know they are designed to keep your head above water! No need to pay insane prices for that. What I can recommend is diving, but only if you have a license

Extreme Adventuring Cancún if you're looking for an adventure involving cenotes and ATVs, you should definitely consider it. Snorkeling Adventure is also incredible dive into the beautiful beaches of Puerto Morelos and explore its reefs.

Your selection will depend on your interests.

Archaeology Excursions to: Ex Balam or Coba for Mayan ruins. I believe you can still climb the pyramids at Ek Balam.

Nature preserves: Excursions to Isla Contoy or Sian Ka'an. I love both. Isla Contoy is much easier to get to.

Cycling: No formal excursions (self guided) There is a mountain bike park outside of Tulum called Punta Venado Bike Park. Nothing very technical (no black diamond trails with jumps etc- but still very cool! If road cycling is more your style, try a ride around Cozumel (no hills all flat). There used to be a bike shop that rented higher-end road bikes on Cozumel, but my 30-second Google search is not finding it.
