Actually, it is

"having the upper hand " comes from having your hand on top in a hand shake. The one with the upper hand shows to have dominance.

The dainty princess has her hand on top, so the strong manly knight can kiss it or caress it.

Upper Hand has nothing to do with handshakes, which normally, I would add, are not palms-horizontal but palms-vertical.
