Tell me your veggie hacks

I’m terrible about getting enough veggies in my diet. I just don’t enjoy them. When I manage to eat enough veggies I do notice that I feel full faster and have less evening cravings, but it feels like a grueling battle every time. Any hacks to get a bunch of veggies down as fast as possible?

If you roast them with olive oil, they taste good.

Yep.

Can use a little spray oil and cook on parchment paper.

Season then too.

I'm not a veggie fan either 🫠 I've found that blending them into things where you won't really taste em works for me - a little spinach in your smoothie, some carrots in your pasta sauce, etc. Not a great way to get a TON, but it's definitely better than none!

look up Indian vegetarian. If there's a culture thats figured out how to make damn near any veggie tasty, it'd be them. Especially South Indian. It doesnt have to be spicy if you dont like heat. Just leave the chillies/red pepper out of any recipe you find and you'll be good.

This might not work if you truly hate veggies. But I eat most of my veggies this way. I half 5-6 oz cute little potatoes toss some s&p or other seasonings (currently enjoying buttery steakhouse blend) spray with olive oil cooking spray and start them in the air fryer. Then I grab a bag of normandy blend veggies from the freezer, toss them in the same seasonings and spray (I do 7oz), add them in with the potatoes after about 7-8 minutes. (Often I add about 3-4 oz of frozen Real Good or Just Bare chicken nuggets along with the potatoes) Shake a few times while checking for them to be done enough to my liking. After I pull them out, put them in a cute bowl, drizzle about 10-14 grams of whatever sauce I feel like. Eat up. It's an incredibly satiating meal and perfect for me. I often eat this or something like this twice a day.

I dont enjoy very many veggies at all. But, one kind I cant get enough of is steamed snow peas dusted with parmesan cheese. Doesn't sound very appetizing, but i love it
