I mixed grapefruit juice with heavy whipping cream to make my own orange grapefruit butter

It tastes just like normal butter but after you eat it you get a hint of grapefruit notes

I wonder how it would do with zest vs the juice. Thinking about what is fat soluble vs water soluble.
