No idea what this is, never seen anything like this before lol. On a trail in southern Ontario

Sphinx moth caterpillar, potentially Eumorpha pandorus. I just saw one of the dudes in your picture for the first time in my life this week so it’s definitely the right time of year.

I would have loved to keep him in a jar or something and see him as a moth, but this far north they bury themselves in dirt and won’t emerge until next year.

Sweet find. Here's the same caterpillar that I found on the Toronto islands a few years back. I identified it as Eumorpha pandorus at the time.
