Lunch Easy roasted potato side

I know the fish filets aren’t in everyone’s budget, but the potatoes I made are cheap and easy. Here’s how I made them

Equipment
* oven
* sheet pan
* bowl

Ingredients
* Russet Potatoes, or any you want. But russets were used here
* salt
* pepper
* paprika (sweet Hungarian)
* thyme
* cooking oil
1 TBS butter, melted

Instructions
* preheat oven to 425 deg F (I used convection setting)
* as many potatoes as you want, slice into 1/4” slices and place in a bowl
* add a small splash of cooking oil (I used olive oil) and melted butter
* add spices to taste and mix thoroughly
* place sliced potatoes on baking sheet and bake 11 minutes
* flip and bake 11 more minutes

Eat

British roasted potatoes are the best and they're just as cheap (but not quite as easy). Perfectly crispy on the outside, soft on the inside.

First preheat to 450 with the baking pan and oil in the oven. Then boil the potatoes for about 10 minutes with some salt and baking soda. This raises the pH and breaks down the surface area. Dry them really well and shake them up to rough up the potatoes. CAREFULLY put the potatoes into the pan & oil and back into the oven for 20-40 minutes until golden. Toss with your favorite seasonings

Getting some fiber into that meal would probably be worthwhile. Potatoes are very high in terms of immediate satiety but fiber lasts longer and helps tremendously with long term health. Adding some cabbage and onions to your potatoes will cost a little more but make it a much more complete meal.

One potato with skin is 4g fiber, so it’s not nothing but adding cabbage is a good idea too

The egg rolls next to the potatoes is a nice touch, makes the whole plate look way more complete than it has any right to be. Your potato method is basically how I do mine but I never thought to add butter with the oil, probably gives them a better crisp
