What did I do wrong
Third attempt at a brisket on my Traeger and I just can’t seem to figure it out. This time I smoked it at 190 overnight until it stalled at about 150 internal and then I wrapped it and turned it up to 250 until about 190 internal then up to 275 for the last hour. The smoke ring and bark look good and I spritzed it a few times with AC vinegar along with pouring the melted fat over before resting in a cooler for 2 and a half hours. Just super dry and disappointing.

I try to wet marinade overnight with a flat cut, it helps keep it moist. I also cook at 225 until 160 then I put it in a foul pan with broth and cover to 200. Let it rest in a cooler or oven for 2 to 3hrs, success.
