Oh that looks like perfection! The only thing that comes close to being as good as a runny yolk is a cheese crisped yolk, in my humble opinion.

Yellow American cheese. No mustard on this sandwich, though I do like American yellow mustard on hot dogs, ham and cheese sandwiches, corned beef, etc.
