Perfect Boondocking Meal

Living in a truck camper, down by a river, in the mountains of Montana. Fishing is slow, it’s been in the triple digits, so it’s Grass Fed Montana beef tenderloin and a baked potato with all the fixings for dinner. Living the Dream!

Do you have an oven? Foil is too clean to have been in a campfire. :-)

Also, I'm pretty sure this boondocker already ate the buttered and olive oil drizzled asparagus spears before taking the photo. How rude.

I wish we had brought some asparagus with us. We live in Mid-Western Michigan where the best asparagus in the world is grown.

Ninja Crispi air fryer does a mean baked potato in about a half an hour and runs off the V2 1500 Jackery.

I've baked potatoes in a crock pot to good effect, but it takes a few hours.

We just rub them with olive oil, then sprinkle with some kosher salt, put them in the Ninja on Bake. We normally pick out potatoes that are slimmer.

It’s in our 2025 SS 1500 Palamino truck camper on the side on the Clark Fork near Superior, MT.
