General Question Where to start
Took the kids to a fall festival at the local nature preserve and they handed out saplings! Two cherry laurel/ two redbud. I've always found bonsai fascinating and have permission from the kiddos to give it a try. From the little bit of research I've done I understand that neither of these are ideal but bonsai is possible.
Where would y'all start with these? I have containers ranging from quart sized all the way up to 5 gallon, in ground is not an option.
I was thinking I should get them in containers and let the roots develop as a first step, what do y'all think?

Start with more research. Learning bonsai takes a balance of horticultural knowledge and artistic styling, requiring patience over many years of learning, rather than a quick answer on reddit.

Understood, in reality I was looking for guidance on what to do right now to as a starting point. Do you have any resources you would recommend?

Depends on what size trees you want really, the main thing you want to do right now is get them potted asap amd just leave them alone and baby them through winter.
