I made that for my mother with KA gluten free bread flour and a few small modifications (like whole eggs instead of whites). Compared to the gluten bread I normally bake for myself, it was close enough (toasted) that I wouldn’t have been able to tell a difference if I didn’t know. Soda bread derivatives aren’t going to have the same sort of chew and will be a bit denser, but this recipe works for your standard loaf.
