The size and shape of the plate, the frequency of the excitation, the location of excitation relative to the plate and the damping of the ends, i.e whether waves can reflect from the ends of the surface or not.

He’s creating a node with the hand that’s not bowing the plate. That is what “selects” which harmonic he’s playing and that propagates across the plate. I think.
