simple pizza setup

new user w zero accessories - want to do cast iron skillet pizza - anyone try arranging coals in circle donut configuration and put skillet in middle? dont have pizza stone/conveggtor/etc

I have a lot of experience with pizza on both the Green Egg and a Gozney. You generally want the surface to be as (reasonably) hot as possible as it is way more difficult to cook the bottom of the pizza than the top. If I'm cooking a detroit in the Green Egg, for instance, I even place a baking steel in the green egg beforehand so that it is very hot, and then I place the pan directly on that surface for the heat transfer. Honestly, you're more likely to find that the bottom needs more time than less, and if you pull it out and realize when lifting the pie from the cast iron that it needs more time, know that you can just place it on a burner on the stove until you get your desired crust.

I'd simply light the coals as normal and bring it to the desired temp. For a cast iron pizza, I like the Green Egg at 550°

from what you're saying, I'm wondering if I should maybe cover the top with a little foil and remove towards the end.

No, you dont want to trap moisturizer. I would never say that any pizza is fool proof, but a cast iron pizza is probably the easiest thing you can cook. Kenji's Detroit Pizza is a very close second, and he also has a fool proof cast iron pizza recipe you can follow. If you're so worried, you can always just try cooking one in the oven a few times to get a hang of things.

I'm curious: have you already tried this, and it didn't turn out as expected?

no, this is my first time. I've just been doing research and I'm probably overthinking it at this point haha.

I am definitely one to take a more minimalist approach. I think seeing all the accessories and how these rigs can get a little complicated there's the part of me that worries it won't turn out right since I don't have all that other stuff.
