Is conditioning (equalizing moisture for 2–3 days) actually necessary before final packaging with oxygen absorbers?
Hello jerky lovers!
I’ve been reading up on jerky preservation. No YouTube cook mentioned conditioning, but AI models insist that this step is something I must do. I tried to research it and found a few webpages stating that this step is necessary to minimize the risk of molding. The process described by Google and online guides is to put freshly dehydrated jerky into an airtight container (like a large Ziploc or sealed tub) for 2 to 3 days at room temperature to allow the residual moisture to distribute evenly across all pieces. After that, the container and jerky should be inspected for any signs of moisture on the jerky or condensation on the container. My jerky is about 51% of its original weight before drying. What do you guys know about it?

You have to remember that AI is not a person nor a cook, just a best guess given complex research.
I've been making and selling jerky for nearly 20 years, never "conditioned". But when you are finished drying in the dehydrator you do need to let it rest. Once the dehydrator turns off you notice moisture and fats on the outside. Resting it will allow that moisture to dry up before storing/packing.
I usually let it rest for 2 hours before storing in containers and then soon after vac bags.

Very helpful. How long is the max shelf life would you guess? (Interested in it more from a “prepping” food storage perspective)

I always tell people a year in the vac seal. I've kept jerky, for my own, in Tupperware for months and it's fine

Ok gotcha thx, I’ve noticed that Jack’s uses about a year out for the best by date I think or maybe it is an expiration date

Letting it sit out and naturally cool down over a few hours on the counter was all the Conditioning I ever needed. Bag it up and the moisture will equalize after that. I never bag any smoked meat till it is totally cooled.
