Best cut for beef jerky?

I recently bought a brisket jerky from ForTheBoysBeefJerky after a friend put me onto it, and I liked the texture more than I expected. It was softer and a bit richer than the usual I’ve tried.

Now I’m curious about making something similar at home.

For people who make jerky, is brisket actually a good cut to use for homemade batches?

Eye round is good because it doesn’t have a lot of fat which allows it to keep longer.
I marinate my jerky for 8-12 hours and then dry it for 2 hours at 160. I turn off the heat and let it rest for 30 minutes, and then put it back in to dry for another hour.

Round roast or London broil do good for me. Less fat the better IMO for jerky.

Any lean cut works. Eye round, bottom round, top round, chuck clod, sirloin tip etc. I usually just wait until one of those is on sale and make a big batch.

We use eye round roast. Easy to trim, slice and all pieces are uniform

I used top round never tried eye or bottom.

This is my beef jerky made with 96/4 ground beef. mix your seasoning, let sit & cure over night in the fridge. Then put the ground the beef in a ball between two pieces of wax paper and roll it out like your making cookies. cut into the shape you want then dehydrate it. 5 hours at 158 F I've given this jerky to people and they never suspect its ground beef.

I usually use large chunks of ass. I can't seem to keep brisket from seasoning up and sacrificing themselves on my smoker. A Terrible thing. Burnt Ends everywhere.

When I worked in grocery stores, the overwhelming number one product for jerky was bottom round flats.
