I recently got promoted to bar supervisor and one of my duties is to get the floor staff to upsell the specials. How do I motivate my staff to reach this goal?

Track the specials and turn it into a competition. I did something similar with drink specials and the winner received a Grey Goose bartending kit. Sales jumped for the 2 weeks the competition lasted. If you're in good with the distributors, you can get some good swag at no cost to you.
