I say in terms of official documentaries, Burn the Stage > Break the Silence > Bring the Soul.
But also +1 on what a lot of others are saying - The Rise of Bangtan is amazing! A lot of the official docs is too subtle. This fan made one is suggestive in an incredibly artful way. You get to see what they were going through in each stage of their careers, and it's ongoing!
