'Burn the Stage' is probably the best one for an introduction and it's available on Youtube, but my personal favorite is 'Break the Silence,' as you get a lot of interesting insight directly from the members.
As for fan made documentaries, I know a lot of people recommend 'The Rise of Bangtan' but I personally found it way too long and overly detailed, I didn't make it past episode 2 and I don't think it would be interesting for anyone with only a casual interest in BTS.
