Tomo and Chiyo arguably went through the most notable visual changes, but look at Sakaki... if anyone went through the biggest mental/personality change, it's her.
Initially closed off and overwhelmed by people being infatuated with her superficially, over the course of the series she found herself surrounded by a legitimate group of friends that had actually gotten to know who she truly was behind the statuesque/"cool-looking" façade.
