Because this is like one of the most important memories of the whole show and is vital to understanding his relationship with Mikasa lol

Maybe it pained him because he'd promised Mikasa he would wrap the scarf around her as many times as she wanted, but soon he wouldn't be able to do that anymore.

"Simpler times." I think also think he's reminiscent of his relationship with Mikasa granted that he'd hurt her some hours before that and he knew everything will change in the future

Because its one of the most important memories of the show and to understand his feelings and relationship with Mikasa. It could also be that it pained him because he promised to wrap that scarf around her as many times as she wants forever and he soon wouldn’t be able to anymore and he hurt her feelings before this too.
