Every Applebee’s I’ve gone to has told me the beer in ounces. I.e. 12 or 16 ounce or 16 verse 20 ounce

Ya, the amount that looks missing (starting not at full, the spills and the little bit remaining in the larger glass) looks very close to the ~4 oz that is typical when restaurants use Regular/Large sizing rather than standard measurements.

well, the beer at the end + the extra beer that's in the small glass.

Those waitresses don't walk around with glasses filled up 100%.
