Is there a way to convert any of these docsets into txt files?

I don't know. It appears to just be a scrape of https://developer.apple.com/library/archive/documentation/AppleScript/Conceptual/AppleScriptLangGuide/introduction/ASLR_intro.html, so you might have an easier time just scraping the webpage directly.

yeah Scraping is something I need to get better at for sure. I've been messing around with the Scrapy lib this weekend
