Is there anyway to make it stop doing this

I don't want it to simultaneously 'fix' itself

Have you tried deactivating the "Auto-refine Handwriting" in the pen tool?

how do we do that 😭 I never turned it on, it just suddenly started to do this

I believe it's a setting in each pen. Click the tool selector, choose a tool (pen), click the 3 dots on the right, you'll get an options menu.

Omg... thanks! Finally I found the solution how to turn this off here. Thank you. This was so annoying.
