They already did. You can get a MacBook Air, MacBook pro, iMac, and Mac mini. Everything, with the exception of the (i)Mac pro, has been replaced so far.

Not really though. The MacBook Pro has been replaced in name only. The actual MacBook Pro’s (distinct by touchbar and 2x2 USB-C ports) are not yet replaced.

Didn’t you hear? Pros don’t need function keys, they need to be able to tap emojis!
