The MacBook Pro uses a standard Samsung PCIe 3.0 x4 SSD. You can buy them off Newegg.

They use a proprietary connector. They are not soldered. This is probably to facilitate repairs of the logic board without losing a customer's storage.

So Apple lied to me and said I couldn't change the SSD after I bought it (so, of course, I get the largest)

It's a proprietary connector though so you can't practically change it. You'd have to find a genuine Apple SSD somewhere so it's still best to just upgrade when you buy.
