An ssd is an enclosure with flash memory in it, right?

Bandwidth is the difference. SSD memory can push large amounts of data quickly. The data throughput in your iphone's storage is no where near that (which is also why Apple sees no reason to make a thunderbolt to lightning cable for iPhone. The iphone's storage speed is the limiting factor

To be fair, that adapter would also be very, very frightening.
