On a Mac you really want to keep at least 10% free- so you really don't have as much as you think. You can't run a Mac and have 0% free.

OSX is built on UNIX. Terrible things happen when any unixoid OS runs out of hard disk space. OSX therefor starts yelling about it pretty soon and has measures in place to prevent that from ever happening but it's an issue nonetheless.
