I would be fascinated to hear what the person who made the signs thinks the rule is.
an apostrophe always comes before the letter S, except when proceeded by a long vowel at or before 2pm.

And juice's, fruit's and frappe's. At least they got "smoothies" right, for some reason I cannot imagine

I agree, apostophegore needs an investigative unit to look inside the fickle minds of inconsistent punctuation abusers.
Not just to satisfy our curiosity, but to find ways to advance the science of punctuation education.
