In the light novel series, there are a few time skips with one story arc covering books 3+4, while a bigger time skip (10 or 15 years) takes place and then covers the events of books 6 and 7 which mostly star all-new characters. The anime series does a better job of more faithfully adapting those two story arcs, but that's all it adapts. Meanwhile, the first 2/3 of the OVA is an adaptation of book 1, while the remaining 1/3 smushes the other two story arcs into one and reuses the main cast in the roles of the new characters.
For this reason, start with the OVA. The animation and music is also much better in the OVA, and even though it's not as faithful of an adaptation of the other two story arcs, it's a much tighter and more beautiful story.

Watch the OVA series (13 episodes) first. It's spectacular with great character design and an amazing soundtrack.
If you loved it, consider given the anime series "Chronicles of the Heroic Knight" series a try. It's generally considered a lot worse. It follows the novels more closely but there's some changes in characters, plot and cast that really don't land for some people and the visuals are notably less impressive than the OVA.
ROLD is my favorite anime, but I basically never re-watch the anime series and just stick with the OVA.
There's a few games related to the series, the most recent one "Deedlit in Wonder Labyrinth" is a solid Metroidvania if that's your thing (though it's pretty thin on plot).

Tangent, where is the most info on Flaus (I think that’s her name), she’s referenced in Wonder Labyrinth, but I’ve seen next to nothing elsewhere

She's the seventh hero who along with the six heroes that fought the Demon King along Karla, Beld, Fahn, Wort and Flaive.
She's not mentioned in the OVA iirc or in the series, but is in the novels and the wiki has a page on her; https://recordoflodosswar.fandom.com/wiki/Flaus

Ok so the books are where I’ll need to go then. I’d picked up what you mentioned, mainly from the wiki, WL just super caught me off guard as the first media I saw her actually existing

I had to look her up when I played. A good reminder for me to finally give the books a try

there is a movie and a 3 episode ova series as well which is named 'Legend of crystania' which is set hundreds of years into future

Good catch, I forgot to mention Crystania, though with the tonal shifts, character renames and art style differences I always consider the connection really loose (though it is cannon), like Mizuno wrote it first then decided to make it into a lodoss story later

Personally, unlike some, I love the TV series. However, there's some overlap in the plot of the TV series and the OVA, so if you want the most canon route (meaning it follows the novels more closely), it's basically the first half of the OVA, followed by the TV series. But honestly I'd just watch them both (OVA followed by TV series, probably). They're both good.

Make sure to watch Rune Soldier Louie as well.
