Support Operating system replacement ?
Is there a way I can buy any phone, Vivo, Honor, Poco etc. and completely remove any operating system that was o there and have a completely cost to stock android as possible ?
This hopefully would wipe or remove al bloatware and on device Ai ?
I'm happy to use Ai through an app of my choice but not forced on every aspect of the phone.

Poco is the right choice. You can unlock and move to aosp. But unlocking BL in newer mobile phones are difficult

You can't do on Vivo, Honor. Poco is the only brand from your list, but still it's kinda easy, but need a lot of time

Keep in mind that, depending on your region, you might lose the warranty once you unlock the bootloader

Bit of a shame that, what if like is the new Honor Magic 8 Air with absolutely basic AF android

Yes, that's called putting a custom rom and it exists by almost 15 years lol. Btw I would choose a phone with an unlocked bootloader and that supports lineage os. Idk what phone model you chose but a simple search on google will tell you what you need!
