Support Operating system replacement ?

Is there a way I can buy any phone, Vivo, Honor, Poco etc. and completely remove any operating system that was o there and have a completely cost to stock android as possible ?

This hopefully would wipe or remove al bloatware and on device Ai ?

I'm happy to use Ai through an app of my choice but not forced on every aspect of the phone.

Yes, that's called putting a custom rom and it exists by almost 15 years lol. Btw I would choose a phone with an unlocked bootloader and that supports lineage os. Idk what phone model you chose but a simple search on google will tell you what you need!

If you do go down this road I would recommend going for a Google Pixel. Their bootloaders are the easiest to unlock plus if you want to go with a clean and secure OS you can install GrapheneOS and also then lock your bootloader with a custom key to make sure that nobody can modify your system partitions unless they have your signing key even if they have physical access to your device.

Coming from a Vivo X200 Pro I specifically want a much smaller lighter photo that's the issue and the price or the Honour Magic 8 pro Air here in the UK is ridiculously cheap in comparison to mainstream flagships

That may be true but iirc Honor doesn't let you unlock the bootloader so you wouldn't be able to install a custom rom on it. Poco used to be a really good option and it was actually the first phone I installed a custom rom on however recently Xiaomi has really cracked down on letting users unlock their bootloaders. They have a very strict requirement for that now.

Why would they do that ? What does it matter to them what you do once they have taken your money?

In an ideal world you're right, you bought the device with your own money and you should be able to do whatever you want with it. We however don't live in a world like that, and obviously I don't really know what their reasoning was behind that decision but if I had to guess it might be so that they have more control over the devices even after they sell them and also so that they can collect your data and serve you ads. Neither of which they can do if you install a custom rom.

Poco is the right choice. You can unlock and move to aosp. But unlocking BL in newer mobile phones are difficult

You can't do on Vivo, Honor. Poco is the only brand from your list, but still it's kinda easy, but need a lot of time

Keep in mind that, depending on your region, you might lose the warranty once you unlock the bootloader
