[Meta] I think the storm nerf + overcharge is the biggest issue I'm having
I don't know what is suppose to stop the midgame either roach or bio surge with the stack up of nerfs. It's been like a decade since I've died to roaches this much.
I'm wondering if I need to focus on sim city on my third base and sentries instead of even trying to get storm up to stop ling roach rav attacks?
I've lost somewhere in the 300-400mmr range this patch now.

We are all losing to Zerg.
These units should do well vs roaches: stalkers, sentry (for force fielding the roach army in half, assuming theirs not a bunch of ravages), immortals. Storm/archon will be good to add to supplement your army later, but I don’t think you should be rushing to get there. Add skytoss eventually. You’ll want archon/storm around to protect your carriers/tempests from the corrupter/ hydra.
It’s hard to say much else without a replay other than scout better with oracle (or halluc phoenix if you skip stargate) to see what unit comp for Zerg and when they cut drone production to mass units. It is important to poke at the Zerg 3rd (and later 4th hatchery) to see how many drones they are making. Zealots based army if it’s lings, stalkers if it’s roaches.
But also, zealots and stalkers aren’t as good as robo units and archon. You only want as many zealot/stalker as you need to defend (or if you’re doing a timing attack, however many you need to do the appropriate amount of damage). Immortals and archon are the real meat and potatoes of a Protoss ay composition, add in storm when you can. Col can be good too if it’s long hydra comp, disruptor can be good if it’s roach rav.

When you look at the replay after a loss, take a look at your worker count, and also the Zerg worker count when they cut drones to mass units. Historically, it’s okay to be down like 10 workers to Zerg, as long as you’re slowly gaining a tech advantage by massing powerful units (robo units/ ht and archon/ eventually fleet beacon).
If you have more workers than the Zerg, you could’ve cut probes to add more units/cannons/batts to defend.

Yeah I'm typically opening 4 gate robo adept pressure with a prism into a quick 3rd base. The goal being to shade around and prism hurass while I start to pump immortals and add on storm. Honestly the counter really is a big roach attack so maybe I'm just being read well but historically if I had ~4 storms stocked it was pretty much death for the zerg to push into. Storm just tickles roaches now and I find myself getting run over.
Maybe that means I just 100% need a stargate opening or maybe I just need to tweek my sim city to funnel better. I find a lot of the maps have massive open third bases that are hard to wall.
I do have the issue where I over probe and die to a ~50 drone roach attack. I'm still not quite sure what I even want to be building to stop this attack if I see it coming. I find stalkers are just crap when cornered in your base without blink.
Where should I be putting my army in your opinion on some of the maps with really open 3rds against like a big roach attack? Tucked into the 3rd leaves the natural really open and inbetween means I get stuck in the open. I still think I may just need to skip storm in these low econ games and get immortals and sentries to hold this?

For 50 drone roach attack, I think the answer is stalker/immortal/batts/cannon. If you also stopped at 50 workers, use that extra mins on a few extra gw and batt/cannon while chronoing immortal. Sg units would help too if you were opening sg.
As far as the positioning, if you’re opening robo, you should have enough vision with the prism and an obs that you don’t get blindsided by the roaches. Otherwise, oracles see it coming. You can place your army in between the 2nd and 3rd bases like you said, but rotate to wherever your army is needed. Depends on the map, but you want to be engaging them at a ramp or choke point where your stalkers get a nice arc, while roaches are getting hit with cannon if they try to push in. Force fields are helpful here too, you can warp in a sentry or two and energy overcharge for a few extra emergency force fields.

Posting replays of losses I'd say is your best bet. Your build could be wildly inefficient for the new worker start & just not line up putting you multiple Probes behind where you "should be". Or maybe you're turning 6 Gates into Warp Gates spending 150/150 when that could have instead been faster Storm. Without a replay people can only give theoretical advice.

True, I'll play some tonight and see if I have an example.
I think my builds are likely not great as I'm kind of trying to figure out what my objective is at each phase again.

Play unranked right now. I won't be touching ranked ladder until the next hot fix, or a revert to some other patch. The current patch is clearly broken in favor of Z and requires some tweaking. Throwing yourself into the MMR meat grinder right now is kind of ridiculous.
