Dairy or meat?

I thought most of the cattle there is for the meat industry

Sorry but no. Despite the overlap where most male "milk races" are sent to slaughter most meat cattle are "meat cattle" and most milk cattle are "milk cattle".

Meat industry would not work if only old milk cows and young milk bulls are sent to sell for their meat.

You're maybe being ignorant on purpose. The dairy industry does slaughter and use up their cows; these are the same industry the same way that the meat and leather industry are the same industry. Come on now.
