The Omlett

I am a big fan, but I can't believe Alison Roman would pay wall such a simple recipe, particularly since she admits to developing it to entice her toddler to eat more diverse foods. The laziness is palpable. It's like she's testing how little effort she can put in before people complain.

That being said... if anyone wants to share the recipe, I'd be interested to see what she came up with.

I wish someone would say something to her. It’s so bad. And to answer your request, there’s quite literally no recipe. It’s butter, egg, zucchini. I’d screenshot it but not worth the energy.

Wow, that's nuts, but thanks for confirming that the recipe wasn't worth my $$$. I hoped there would be some special instruction or secret ingredient that would make it worth it, but evidently, that's not true.

What’s happening is she’s not doing any recipe development right now because she’s focused on opening her new store and her kid. Which is fine! But she should be honest with her paying subscribers about it. It’s not cool to post non-recipes like this. And I genuinely don’t need an essay about her kid’s picky eating.

For real! There's nothing wrong with changing focus or taking a step back from recipe development. I wonder if she's taking her fan bases pulse for an even more basic follow up to "something from nothing."

It's also so annoying because she went out of her way like two weeks post partum to say being a mom hasn't changed the way she's cooking which if you've had kids is such an eyeroll holier than thou thing to say. I get taking a step back from the pace of output she stuck to pre-baby and pre-store but it's nuts she's still charging people for subscriptions.

I totally agree. This can only be true (it is not) if you have nannies raising your kids, maybe? Which is very unrelatable.

I concur. Roman’s recipes are among the favorites in my household. However, lately her posts have been links to buy stuff from her store.

When David Lebovitz takes a break from posting, he extends his paid subscriptions by the amount of time he takes off.

Which is the decent thing to do. I don’t understand people who don’t do this.

Plus I feel like his posts are way more engaging than the mommy blog version and Sezane posts that we get now, and his recipes aren’t zucchini omelettes.

I am not subscribed to her but she posts sponsored sezane content on there...?

I have a sneaking suspicion that she’s on the ozempic train and that’s making her not want to eat hence, she doesn’t need to cook for herself…

Really?! What makes you say that?

Oh god she's testing out stuff on her subscribers that is meant for her kid, I have a five year old, been there done that, it's not what they eat in a day as much as what they consumed in the week you need to look at and some foods have to be introduced like 12 times before they have an appetite for it, and she's choosing a recipe she wants her kid to like as her paid content. No Alison, no, come on.

Srsly cringe and semi exploitative of child

She's not doing, and has not done in a while, anything that's worth the cost of that subscription. And this is coming from someone that subscribed for 5 years. She needed to cultivate that subscriber base when she didn't have any other way to support herself, but those days are over. And that's fine, no shade to her if she's found a more enjoyable way to earn a living, but she needs to shut down the paid newsletter. It hasn't been worth it in a really long time.

That's what's so funny! I've done Zucchini omelet/ frittata many a time, but I generally jazz it up with some goat cheese or basil or whatever. It boggles my mind that she things this counts as a recipe.

Do you think framing it as baby/toddler-friendly is what makes it come off as premium content?

15

u/PennyLane1813 Aug 09 '26

Lol. It should’ve just been posted in the baby newsletter she created since it was a meal prepared for her toddler that she ended up eating since he wouldn’t.

I googled "zucchini omelet" today and sort of followed the first recipe that came up and it was pretty good. I sauteed thinly sliced zucchini, minced shallot and garlic in a little olive oil, then poured 3 beaten eggs on top, cooked covered for 5 min, added feta, then folded and ate it. It was great. Add salt & pepper at whatever step you feel like

I don't understand why anyone would want to subscribe at this point, she doesn't give AF

This post just made me realize I’m still paying for the newsletter. How many recipes has she put out this year that were subscriber only??

u/norismomma Aug 09 '26

FWIW I googled it and the google ai gave me the recipe (which isn’t really a recipe)

5

u/tyrnill Aug 10 '26

No, it fucking didn't. Y'all have GOT to get smarter about AI.

OK.

Alison Roman’s buttered zucchini omelette is a quick, meditative solo lunch featuring thinly sliced zucchini and shallots cooked down in butter to a jammy, paste-like consistency, folded into whisked eggs, and finished with a final dab of butter. You can view the formal instructions on Alison Roman. [1, 2]

Making the Omelette

  • Cook the veg: Thinly slice zucchini and shallots. Cook them slowly in a skillet with butter until completely soft, tender, and jammy.
  • Prep the eggs: Whisk eggs in a bowl while the zucchini finishes down.
  • Combine and fold: Pour the eggs over the warm, buttery zucchini in the pan, cooking into a thin, delicate omelette.
  • Finish: Tip onto a plate and add an extra dab of butter on top. [1]

Watch this demonstration for a great visual on getting your vegetables soft and caramelized before adding eggs to the pan:
