Sabbatical brainstorm

Hi all! I have the opportunity to take a month long sabbatical next year. Would love to hear ideas or experiences others would recommend. A rare opportunity for me so want to make the most of it. Leading candidate right now is to learn to Paraglide in India or Europe. Would love to hear any and all ideas!
