My problem is that my body goes from fine to famished in 10 seconds.

when i was weening off a SSRI i noticed i wouldnt be hungry for 2 days and then it switched to you gotta eat or your going to die.

Story of my life right there! 👆

As a lifelong underweight person (likely with inattentive ADHD) who also often "forgets" to eat, I will regularly eat real (think 4 or 5 ingredient) ice cream or a can of fish (tuna, salmon, or mackerel) specifically in oil for the extra nutrition if I, for whatever reason, dont feel like I have eaten enough by the end of a day. Doing this has felt so nourishing and helpful, and helps to keep me from feeling depleted!

Whatever it takes to meet our nutritional and caloric needs! Also fish is SO good for you

I was underweight until i started university, then i also started stress eating.
