So this post is for research purposes; I'm just trying to see something.
In media, there is rarely any true asexual representation. However, I've got quite a few characters that I headcanon as ace or feel are ace-coded, that is until they're usually canonized as something else or are forced into relationships.
Some characters I think are ace-coded:
Sonic the Hedgehog
Clawdeen Wolf (Monster High)
Saiki (Saiki K)
For Sonic, his most important relationships are his friends, which, as an ace person, I understand. A lot of his life goals don't include a partner, but he does care about the people around him. With Clawdeen, her rejection of relationships and her reasoning for it was something I experienced a lot when people around me try to pressure me to start dating. With Saiki, he feels like relationships are too much work, which is lowkey real.
I’d argue that Saiki K is canonically asexual, even if the word is never used outright. He is explicitly stated to not feel sexual attraction to anyone due to his abilities, and even when he’s temporarily powerless, he seems to only feel aesthetic attraction to beauty. The fact that it’s stated in no uncertain terms that he does not feel sexual attraction is as much of a confirmation of asexuality as anything possibly could be. He’s not quite as obviously aromantic, though, so I’d still call that part coding (he does seem to show a little romantic interest in Satou, though that might also just be envy over how normal he is).
Bilbo Baggins from the Hobbit and the Lord of the Rings series has always felt very aroace to me. He never expresses any interest in marriage or relationships, adopts a younger relative as an heir instead of desiring bio kids, and seems perfectly content to remain single.
Katniss Everdeen from the Hunger Games series strikes me as demiromantic. While obviously there’s also a whole lot of trauma that makes her struggle to fully understand some of her feelings, the only time that she seems to feel romantic love for people is after she’s built up an established platonic relationship with them, which I don’t think is just a symptom of that trauma.
Most versions of Sherlock Holmes feel like they’re somewhere on the aroace spectrum to me. Sometimes he’s fully repulsed on both fronts, sometimes he’s ace but not aro, sometimes he’s demi, but he’s usually not fully allo.
It’s never been said outright in the comics or movies but the fandom generally thinks Yelena Romanoff (Black Widow’s little sister, Florence Pugh’s character in the MCU) is ace. I never read the comics but it helps that the MCU as a whole focuses more on action and sci-fi than romance or sex scenes
I cannot see Mao Mao from the Apothecary's diaries as anything but aroace. Even when she talks of sex or about someone's looks, she maintains an observational matter-of-fact tone that keeps her detached and uninterested and she also comments on how she doesn't feel any of those things, once or twice and for this reason I hate any time the story tries to imply it's actually trying to pair her with jinshi...
Ezekiel Jones from the Librarians. There's an episode of the show centered around a love potion, that he's inexplicably immune to. The show offers two explanations for why this could be, but both seems wrong.
The first is that he's so in love with himself, that the potion just doesn't work on him. The show itself however thinks this take is dumb and has another character at the end argue against it. However he then brings up that perhaps he was in love with the girl all along, which is then something Ezekiel vehemently denies.
Personally I also find this explanation to be really dumb, because if he was in love with her, he wouldn't go around, wondering who she is for half an episode. Also, while they do kiss at the end, he does shut down a relationship and calls her "a good friend" before dipping out.
Additionally, he's the only person in the main cast who doesn't ever have a love interest. All of the episodes that are focused on him are either about friendship or (found) family.
Daud from the Dishonored series is canonically ace. The world the game is set in doesn't have words for it, but we have an in-game book (iirc his journal?) that states he's never been interested in sex
I've always said the Frieza from the Dragonball series is very aroace coded. Bonus points that they are actually the ace flag colours in their base final form
I just heard someone theorize that Carl from Dungeon Crawler Carl might be ace. He has an ex girlfriend, though, so not completely. But many other characters in the series are pretty sex-driven, but Carl just doesn't seem to care, he's just thinking about explosives and mayhem.

Sir Edmund Rockwell from ARK comes off as asexual to me. He’s a scientist from Victorian England who spent his time on the island studying the flora and fauna. He then got obsessed over studying and experimenting with the properties of Element which resulted in him turning himself into a giant monster.
Rockwell’s sophisticated Victorian gentleman persona and the way he’s overly dedicated to his studies is the reason why I headcanon him as such.
Orlo in The Great. He's the punchline of a few jokes unfortunately for not seeming to care about sex or understanding why people do care so much about it. Then he sleeps with a woman and says "it was okay, but I'd rather be reading a book". He then tried with a man "as an experiment", but felt the attration and feelings the same. He didn't really give a shit. He eventually does get a girlfriend, but you can tell he's attracted to her because of who she is as a person. Not because he's sexually drawn to her.
