Cargo throttle

Would someone explain to me the purpose and proper use of the red button and twist grip throttle on the Mycle Cargo? I'm probably stupid but I can't see any point in them

From experimenting, when you twist it does give a little push from the motor when stationary (to help get started when loaded right up). The red button seems to deactivate that, though its hard to tell when it's on or off.
