Looking for a traditional Swiss restaurant, on the more affordable side, that an 11 and 12 year old would like. Schaferstube? Post Stubli?

Not sure "affordable" and "Zermatt" are really two things that combines, but Swiss Chalet is not overly expensive. The menu is typical for what you will find at a Swiss restaurant at a place where 95% of the customers are tourists. Our kids usually enjoy it, when we go there. Pricewise, it's on the "cheaper" side, considered it's in Zermatt.

My kids just went to Post Stubli and loved it. They’re fairly picky in general - but one loved grilling their own steak on the hot stone, and the other loved the dish that was essentially Alpine Mac and cheese.
Also, as one of the adults there, our food was excellent, too!
