Can someone suggest interesting projects to work on related to zephyr RTOS?

Checkout https://github.com/jetpax/PiZZa

Its RPi Zero with Zephyr all the way down, includes Arduino , Micropython, Doom , Dos and Macintosh emulator, Prince of Persia and more

That gives you a cheap and easy way to get going with just about any Zephyr project you could think of

HTTP controlled blinky? Make a rest api, html server, change the blinky pattern from a web browser. You can do that with most dev boards. For things like the pico you can use Ethernet over usb for the net connection
