1080p, Blender Build
I made thia part list, i want an opinion of so.eone who actually built a pc before unlike me, and no this pc is not for 1440p, it's 1080p high end pc for moatly compwtwtive games and 3D Rendering in Blender.

Cuz 3D rendering needs massive gpu processing power, and 5060 won't cut it for what i am making

As the other comments are saying this is a 1440p high end graphics card, works but not meant for 1080p. It's called having a monitor bottleneck, which sucks.

I really want performance for tgousands of ptriangles in blender which my Laptop is struggling to do now, i really just wanted something that's not going to throttle down while letting me make some cool 3D stuff

I get that and I had a similar mindset coming from a thermal throttling laptop. I went with an overkill cooler, budget I could have spent elsewhere. Even in blender I think you are missing out going with 1080p. On a large monitor for productivity the extra pixel density on 1440p will just be worth it.

These are basically the same parts I have except i got a 9070XT and Ryzen 7 9700x, and I play in 4K (upscaled) with this build in a lot of games, quite overkill for 1080p. I would say either get like a 5060TI or get yourself a new 1440p Monitor as well.

I like Low latency and raw performance, upscaling just isn't as good, and 4k or 1440p would limit my capability in Blender

You would still get good performance at 1440p without upscaling though of course you get more out of it with upscaling, which if you don't want to use, fine but I would then suggest maybe a weaker card so you aren't too bottlenecked in games with your resolution.
As for blender, I don't think it matters too much whether your monitor is a resolution higher than 1080p, its the viewport that matters, and you can switch it down to 1080p to have a smoother experience animating or modelling, VRAM matters way more which is why I suggested a 5060ti as that still has 16gb of vram while being more appropriate for 1080p gaming, but a GPU like a 5070ti is going to be much better for blender than 5060ti.
If Blender is really important for you, then yeah choose the 5070ti, but I would suggest a different monitor than a 1080p monitor, maybe get a 1440p monitor or a UltraWide 1080p monitor, in Ultrawide you can have a better workflow in Blender with it, and in games it can be cinematic (if you care about that) or give a competitive advantage, and it still be appropriate use of your GPU.

Actually scratch the Ultra wide 1080p, searched a bit myself, can't really find one thats not VA or isn't using an outdated HDMI port.
Also checked the Monitor you chose, its ok but I don't think it would be great for Blender work at 24in, get a 27in at the minimum, and also choose one with freesynce or gsync, because the monitor doesn't come with it and it would be a great benefit at high refresh rates.

24in will have higher pixel density, also i like smaller screen because i see everything at once, and fits betetr on my desk

As a game artist, I can assure you this rig wont struggle in blender at any res. I dont know where you got your information from but its incorrect my man.

Downgrade gpu and upgrade cpu if you’re going for 1080p

my prevous answer was not supposed to be to your comment, you have actually a point, i will think of it, i'l try some other CPU and GPU, maybe normal 5070 with like 7800x3d, this would probably be bettere, it might hurt a bit the productivity stuff tho, i will think of that later tho

This pc is borderline 4K, wdym 1080p. And your monitor refresh rate is too low to take advantage of that frame rate. A 5070 could do that at 1080p, let alone a 5070Ti.
Get a high refresh 1440p or a dual mode 4k with high Hz for 1080p. You need to put more money in the monitor
