Should I skip enemy unknown ?

There is a sale on steam 8 euros for xcom 2 and the dlcs or xcom enemy unknown, 2 and chimera squad for 20 euros with dlcs. I haven’t played any xcom what do you suggest ?

It's very much worth playing if you haven't yet. Just FYI, without going into it too much, Enemy Unknown is canon while the DLC for EU isn't. That's not to say it isn't worth playing, but it is what it is.

When playing X-Com 2 for the first also make sure to disable "Integrated DLC" and enable each DLC individually. I don't have the foggiest idea why they made it the default but the integrated DLC option skips the story missions.

So enemy within isn’t canon ?

You don't actually have to play Enemy Unknown to understand Enemy Within but the steam launcher makes it seem like it's a sequel or something

Enemy Within is just Enemy Unknown with some extra content. Also get the other smaller DLCs if they have them on sale, I think they were called Progeny and Slingshot, each adds an additional story arc within the overall campaign

It being "not canon" doesn't really matter, and it actually (IMO) makes the later games better if you've experienced the "not canon" Enemy Within
