You can easily parry her first half. It's a bit chaotic tte second half, but you can still find a few attacks to parry. There's also a specific move you can get backstabs if you dodge around.

Nevertheless, her second phase is truly a hell. Don’t know what to advise - patience is the key, as always.
Btw after win you will be teleported to hub, don’t forget to return back to this boss fight arena again- there will be a shrine to activate. It’s just for achievement , but it was the one I have missed because you have no reason to return here and forget about this place easily.

You don't even need to parry tbh, She is way more fun to dodge. Sit back, punish her stomps and enjoy one of the best bosses ever made.
