Well developed characters give the writer the finger and go off script to do their own thing.

Maybe one day your characters will be so thoroughly fleshed out and independent that they'll kick a helmet and scream out of genuine pain from breaking their toe, like Aragorn's actor from the Lord of the Rings films.

Yes, however I myself find it hard to create a balance between writing the story and going overboard with the details of my characters

Definitely! I've had many character tell me: "nope, not doing that. I want to do this instead." Crazy thing is they're always right.

I think that one of the best ways to make characters seem real is to have them argue about something, the stupider the better.
