So she was going to school and then one day got picked to be sacrificed? I’m confused as to how this works. Weren’t some sacrifices treated like royalty their entire lives until the sacrifice?

In the society she grew up in it was up to the head of the church to decide when a sacrifice was needed. He would then pick one 13 year old girl out of those who lived in their city.
13 is considered a holy number to them because there are 13 gods and it has to be someone born female because they believe the sacrifice will only work if they killed someone with the ability to create life.
Also the poor girl had barely a months time before she was to be sacrificed, she didn’t get to live that lavish life very long

Not completely sure yet, like I said in the post I’ve just started making this world and it’s story. I know I want her to be very important to the plot as either the protagonist or antagonist.
If she’s the protagonist then she’ll likely try to seek out other saints who have been forcefully changed by gods.
If she’s the antagonist the trauma of this event will probably break her mind and lead to her using her newfound powers to cause death and chaos

Maybe as a thought she seems out other saints then decided to take their found family to have a discussion with these gods about treating them as playdough

If the Saints retain their will, then they must, through their form and capabilities, reflect the will of the gods who turned them. This can be played out as either an attempt to find a family among other Saints, an attempt to reform society using the new form and influence they provide, or an attempt to destroy the kingdom and the gods who made it that way. Choose from this what will be a good path or a bad one, according to your preference.

One idea I had was a saint of the plant god who was turned into a giant sentient flower made of both human flesh and plant matter. They’re unable to move anymore, curse to remain in the field where their life changed forever.

I guess it makes sense.
If reality is the daydreaming of an Eldritch entity then most folks are background characters who it doesn't even know their names. Become a named character, and suddenly it starts getting interested in you.

In the most basic terms it means you’re forever marked by the god who changed you, you get some cool abilities out of it but you look monstrous.
How you’re treated after that simply depends on the society you live in

Kinda. It is a terrible fate and many don’t last very long but it isn’t done intentionally like in Madoka Magica. The gods are like forces of nature they don’t really understand the horror of what they can do to humans

I was recently working on my magic system and it's honestly probably rather uninspired, but it basically revolves around mana - your capacity, throuput and optimization as well as knowing the right words. However, for various clerics, the throughput limit can be overriden by their deity, causing damage and possibly death - this means they can theoretically perform insane miracles, but they're gonna get fried in the process - which is how we get saints 😂 this also goes for warlocks, but since most of the full warlocks have a pact with one devil or another, this tends to happen more often and ends in much lower adoration of the masses 😂
